- Pour 1 litre of 100% pomegranate juice (fresh-pressed or unsweetened bottled) into a wide, heavy pan.
- Bring it to a boil, then lower the heat and simmer uncovered, stirring now and then.
- Add the juice of half a lemon if your pomegranates are very sweet.
- Cook for 50 to 70 minutes, until it has reduced to about 200 ml and coats a spoon. It thickens more as it cools.
- Pour it into a clean jar and store it in the fridge for up to 6 months.
