Quick answer:A traditional Turkish breakfast (kahvaltı) is a spread of many small plates: white cheese and kaşar, green and black olives, tomatoes and cucumbers, honey with clotted cream (kaymak), jams, an egg dish such as menemen or sucuklu yumurta, fresh bread or simit, and endless glasses of black tea. The full shared version is calledserpme kahvaltı.

Key takeaways

  • Kahvaltıliterally means "before coffee" (kahve+altı). Traditionally it was the meal eaten before coffee.
  • It's built from manysmall shared plates. Variety matters more than volume.
  • Thehot egg dishis the centrepiece. Everything else can be set out cold.
  • Tea (çay) is essential, and hosts keep refilling the tulip glasses.

What is kahvaltı?

Breakfast in Turkey is a social occasion. On weekdays it can be a quick plate of cheese, olives and bread. On weekends and holidays it becomes a long gathering around a table covered with dozens of small dishes. The name comes fromkahve(coffee) andaltı(under, before), because in Ottoman times coffee was drunk after the meal (background). Tea is what people drink throughout the meal today.

The biggest version isserpme kahvaltı, literally "scattered breakfast", where the whole spread is laid out at once for everyone to share. Regions have their own specialities: the city of Van in the east is famous for its lavish breakfast houses, and Aegean breakfasts lean towards olive oil, herbs and fresh greens.

The anatomy of a Turkish breakfast spread

Use this list to plan your own table. You don't need everything. Choose two or three items from each group and you'll have a proper kahvaltı.

Spreads and extras Acuka or muhammara, ezme, walnuts, dried apricots, butter Yes
Drinks Black tea in tulip glasses; Turkish coffee after the meal Start the tea first

The hot egg dishes (pick one or two)

Menemen

Eggs are softly scrambled into tomatoes and green peppers cooked in olive oil or butter. Scoop it up with bread straight from the pan. Follow ourmenemen recipe, and if you're wondering how it differs from its North African cousin, readmenemen vs shakshuka.

Sucuklu yumurta

Slices of garlicky Turkish beef sausage (sucuk) are fried until the fat runs, then eggs are cracked over the top. It's traditionally cooked in a small copper pan. See ourcopper-pan sucuklu yumurta.

Çılbır

Poached eggs on garlicky yogurt, finished with chilli butter. This is the dish known worldwide as "Turkish eggs". OurTurkish eggs guideexplains the technique, and theçılbır recipegives exact quantities.

Breads and pastries

Bread is essential at a Turkish breakfast because it's how you eat almost everything else. Good options include:

  • Simit: a sesame-crusted bread ring dipped in grape molasses before baking
  • Yogurt poğaça: soft savoury buns, often filled with cheese
  • Sigara böreği: crisp cheese-filled pastry rolls
  • Village bazlama: a thick, fluffy pan flatbread
  • Spinach gözleme: thin griddled pastry with a savoury filling

For more on each, see ourguide to Turkish flatbreads.

The sweet corner: honey, kaymak and jams

Every spread needs something sweet. The best-loved pairing isbal-kaymak: runny honey poured over thick clotted cream and spread on warm bread. Build a proper plate with ourhoney and kaymak platter. Add a homemade jam and a small bowl of tahini swirled with grape molasses.

A make-at-home plan for 4 to 6 people

  1. The day before:Bake the poğaça or simit. Make one spread (ezme, acuka). Marinate the green olives with lemon zest and thyme.
  2. 60 minutes before:Put the kettle on and set up a two-tier teapot (çaydanlık): water in the bottom pot, strong tea brewing in the top pot.
  3. 45 minutes before:Slice the cheeses and put the olives, honey, kaymak and jams in small bowls.
  4. 30 minutes before:Cut the tomatoes, cucumbers and peppers. Drizzle with olive oil and sprinkle with salt and dried oregano.
  5. 15 minutes before:Warm the breads in a low oven. Fry the halloumi if you're serving it.
  6. At the table:Cook the menemen or sucuklu yumurta and bring it out in the pan. Pour the tea. Don't hurry: a good kahvaltı lasts two hours.

Chef's tip:To make Turkish-style tea, use about one teaspoon of loose black tea per glass in the top pot. Pour on boiling water and let it steep over the lower pot for 10 to 15 minutes. Each guest dilutes the strong tea with hot water to taste:açık(light) ordemli(strong).

The Cypriot twist

In Cyprus, breakfast follows the same idea with local ingredients: friedhellim (halloumi), cracked green olives with coriander seeds, and island breads such as bitta and çörek. For a one-pan Cypriot breakfast, try ourhalloumi and tomato breakfast pan.

Regional breakfast styles

Every region of Turkey adds its own dishes to the breakfast table:

  • Van (East):Famous breakfast houses serving dozens of plates, includingotlu peynir(herbed cheese),murtuğa(flour fried in butter with egg) and honey with kaymak.
  • Black Sea:Kuymakormuhlama, a stretchy mixture of cornmeal, butter and local cheese eaten hot from the pan with bread.
  • Aegean:Lighter plates of wild greens, herbs, olive oil, local cheeses and figs.
  • Southeast:Spicy dishes such asezme, katmer with pistachios, and more pepper paste and isot.
  • Cyprus:Hellim, çakıstez olives, bitta and carob syrup with tahini.

A vegetarian or vegan kahvaltı

Turkish breakfast suits vegetarians well: cheese, olives, eggs, vegetables, honey and bread cover most of the table. For a vegan version, keep the olives, vegetables, tahini and grape molasses, jams, ezme and bread, and add a plant-based spread such as hummus or muhammara. Swap the egg dish forcourgette frittersmade with chickpea flour, or sautéed peppers and tomatoes.
