Preparation steps

Prepare the kolokasi

Peel the kolokasi and wipe it with a clean cloth without ever washing it in water. Cut it into walnut-sized pieces, snapping each piece off with the knife rather than slicing through.

Chef's tip: Kolokasi turns slimy if washed; always wipe it with a dry cloth.

Brown the vegetables

Dice the Cypriot potatoes. In a wide pan, brown the kolokasi and potatoes in olive oil until golden.

Add onion and celery

Add the sliced onions and chopped celery stalks and cook for 5 more minutes.

Braise gently

Add the lemon juice, salt, cumin and half a cup of hot water. Cover and cook over low heat for 15 minutes, until the vegetables are meltingly tender. Scatter the celery leaves on top when serving.

Time's up! Enjoy your meal.
